Hi Beth! I just found out I can buy your book on Amazon Spain to deliver to Portugal! I can't wait to get it and start cooking from it. This Orzo Pesto Salad looks amazing and perfect for summer. Nice to see you on Substack! :)

Yes, I cooked it and I'm planning to eat it thru out the week since I live by myself and I don't like cooking everyday. I cooked it yesterday and did not mix the goat cheese, left a small plate on the counter for 10 min and added goat cheese and it was wonderful.

One of my favorites and nearly impossible to buy pre-made (always too oily). I like the addition of snap peas here. I can't get my husband on team goat cheese yet, but I think it does fancy it up a bit.
