Great minds........we had poulet chasseur last night at our annual 1920s dinner party in the Vendée. Local mushrooms were an awesome inclusion. It's nice to turn into autumn with enthusiasm, and you always help with that! We had a 1920s themed menu including haricots amendine, salade Ceasars, huitres Rockefeller, and pommes dauphinoise. The event was a huge success and your recipe similarly holds very well for a buffet. Thanks again for all you do! We even had 2 friends from SGilles!

Can the cognac be substituted?
Oh sure you could use Marsala wine that would be great too, or sweet Sherry, or just leave it out all together would be fine too.
