Step#1: Make the Caramel Sauce
Essentially, you’ll boil the sugar water until it turns a deep amber color like this below.
Step#2: Fill Your Ramekins
But be sure to spray them with baking spray first! I like glass ramekins because you can see inside them and check on the process during various stages (in the video above I’ll show you how)
Step#3: Make the Custard Base
Add simmering milk/cream into your egg mixture. Temper the eggs, fill the ramekins and bake in a water bath. Yes, the water bath is necessary and will ensure a smooth creamy texture!
Watch Out For This:
Don’t overbake the custards, or you’ll end up with little air bubbles on the side that look like this!
I greatly disliked sweetened condensed milk.

The French must have adapted the concept of the New World flan into something better though condensed milk was not part of the equation back then ..
