If you find yourself in a chicken rut, looking for something NEW to do with those chicken breasts sitting in your freezer or fridge, try this! It’s easy and delicious, and dare I say better than take-out! Or that’s what my kids tell me. But try it and see for yourself!
Unlike take-out, the chicken stays crispy and moist (since it hasn’t been sitting in a container for 30+ minutes) and the sauce is a big hit with kids because it’s sweet and savory, so much so they gobble up the peppers with no push back!
So, What Are You In For?
Simply dredge the chicken pieces in cornstarch. This will protect the tenderness of the chicken, lock in the moisture, add to the crispness, and thicken your sauce! For extra tender chicken use chicken tenders.
Slice your bell peppers into strips. Or you could also throw in some broccoli for an extra vegetable.
Whisk up the sauce, pour it in, toss et voila! Dinner is ready!
Cookbook Update:
Monday is the day! A team of seven will be knocking at my door to begin shooting my cookbook! Months ago, this weekend felt miles away, but now it’s go-time!
Today and tomorrow is all about getting the grocery shopping done! 45-50 recipes in week #1, then the remaining 45-51 recipes week #2, then a bunch of lifestyle shots in week #3.
The funny thing about grocery shopping in L.A. is that different stores have different things they do best! Bags of inexpensive nuts? T.Js. Speciality items like fig jam and champagne grapes? Whole Foods. Incredible cuts of meat trimmed by expert butchers? Huntington Meats at the Farmer’s Market. And let’s not forget all the to-go containers so that the team can take some of this food home with them! Smart & Final.
If I was at our house in France, I could zip around town and get this all done within a 2-3 mile radius. But here in L.A..? Not so much! But not to worry I have a full tank of gas, and a very eager assistant to help me (my teenage daughter is trying to save up for an iPad.) There’s no worker more motivated than a teenager with material needs!
She even shared her highlighters with me to help organize the shopping list! Wish us luck!
And this is just for week#1! LOL! Yikes!
Can’t wait for the cookbook. Just want to give a tip about the font of fractions in the recipe book. Could you please make sure the font is legible for reading fractions. I have some cookbook that make note of this & some that don’t, which makes it difficult to read. Thank you!
Beth, I must say, your enthusiasm is contagious. Thank you for including us on this process.
