Key limes are in season and one of my favorite ways to use them up is in these Key Lime Cheesecake Bars. They are easy to make, rich and creamy with just the right amount of tartness coming from the key limes.
Add a dollop of whipped cream and a slice of lime and they make a festive dessert for Easter or Mother’s Day. Also great for baby and bridal showers!

A Lime Squeezer Saves the Day!
Squeezing 40 keylimes can drive you crazy! It’s the most tedious part of this recipe! But a Citrus Squeezer really makes the process a bit easier!
Building a Collection:
One of my favorite sections of my cookbook is the section on “Entertaining Essentials” and How to Build a Collection, even if you are starting out. It does not need to be expensive! I get most of my things from yard sales, flea markets, and online sites like Etsy, Ebay and Selency.

While I love cooking and serving food, how it’s served and what it’s served on is another favorite part of the process!
In the video below, are a few tips to help you create a collection of pieces for entertaining that will look acquired, and add a lot of soul to your parties. These little touches will help your guests feel comfortable, strangely at home, and settled without really knowing why.
Pssst: It’s the setting! When it’s done with a little forethought, it has a way of transporting people!
