Here in France, Strawberries are back!
They are finally reappearing at the market and in the stores! Unlike in L.A., where you could pretty much find a strawberry year-round! They wouldn’t always be good, but hey they’d be there!
I think I prefer the French system, of “if it’s not in season, it doesn’t exist”. That way, you aren’t tempted to buy something that you wish you hadn’t.

This Easy Strawberry Sauce is the perfect thing to welcome them back! Because it’s a cooked sauce, your strawberries don’t have to be “at the peak of sweetness”. You can still get a great sauce out of them! The sugar and simmering will help with that.
This sauce has just the right amount of sweetness, mixed with tartness coming from the lemon zest. And the best part is, it can be used for more than just ice cream!
This sauce is also fantastic over homemade crepes, lemon ricotta pancakes, or my Burnt Basque Cheesecake. It's also great when slathered on buttery toast or stirred into yogurt.
