Healthy Chicken Salad
A new twist on a classic favorite
We’ve finally eaten the last of those insanely good chocolate cookies and Valentine’s chocolates, so I thought you might appreciate something on the healthier side?
You’ll love this healthy chicken salad recipe because I’ve taken a few liberties with this perennial favorite. First off, no mayonnaise, I use a lighter Greek Yogurt instead.
The Greek yogurt dressing gives it a lighter feel, and you’ll love the addition of mango chutney, garam masala, nuts, and dried fruits for both flavor and crunch. You can use up any leftover Greek yogurt (why does it always come in such a big tub?!) by pairing it with my Homemade Granola Recipe for a great breakfast idea!

Why You’ll Love This Recipe
It makes a good-sized batch that lasts throughout the week and is easy to take to school or work.
It will last for at least 5 days in the refrigerator in an air-tight container.
It’s the perfect thing to make in advance and serve to guests for lunch. Serve it on top of greens or as a sandwich in a pita pocket
Add the Fruits and Nuts!
The hallmark of a great chicken salad is the mix-ins. In my opinion, chicken salad needs more crunch and chew to be more interesting.
I know most recipes call for celery for crunch, but I prefer green apples and nuts instead. If you don’t like the tartness of the apple, you could add more sweetness by using red seedless grapes.
For dried fruits, I add both golden and traditional raisins for a wonderful sweet chewiness. But you could also add cranberries or dried apricots, too.
