This Creamy Chicken Florentine Recipe is a quick and easy weeknight meal that's a cinch to make when you want something simple, yet also crave something a bit fancier.
Tender, juicy chicken breasts are gently sautéed and then simmered in a creamy white wine sauce with shallots and spinach for an easy one-pot meal.

Secrets to Keeping the Chicken Moist and Tender:
Salt the chicken lightly as soon as you come back from the store. This is a trick I learned from one of my favorite cookbooks Salt, Fat, Acid, Heat by Samin Nosrat. She spends a whole chapter explaining why pre-salting makes such a difference, and she’s SO right!
Pound the chicken breasts to ensure even cooking, and then dredge them in flour. The flour creates a protective barrier around the chicken, preventing it from drying out and preserving its tender, juicy texture.
Saute the chicken in both oil and butter. Butter provides the flavor, and oil prevents the chicken from burning, resulting in a juicy piece of sautéed chicken.
Multi-Task the Side Dish
Because the chicken cooks entirely on the cooktop, this leaves your oven free for your side dish.
Since the chicken is tender and saucy, it pairs really nicely with something crispy and crunchy. And for that, I turn to my Foolproof Roasted Potato Recipe.
Give The Potatoes a Head Start
Get your potatoes going and give them a 30-minute head start.
Meanwhile, measure out the ingredients for the chicken and begin the prep.
Once the potatoes appear to be almost done, start the chicken.
The potatoes can keep warm in a 200F oven if you need more time.
