the backstory:
During the pandemic “mug cakes” were all the rage with our family. They were the go-to snack for movie night. But after weeks of arguing about what movie we all wanted to watch, I came up with a better system. We’d each pick a movie, write it down on a piece of paper, and throw it into a mason jar. Then whoever had “picking rights” that night would select a title from the jar and that was the movie we were watching.
To this day Jumanji holds a special place in my heart. One of my daughter’s suggestions I would have never watched on my own! And for our part, the kids fell in love with Coming to America, a 1980’s classic that even I enjoyed revisiting!

the recipe:
I realized the problem with mug cakes is that you have to microwave them individually, and no one wants to wait around for the 4th mug cake, watching those with the 1st-3rd mug cakes gobble them down! So I came up with this idea instead.
This Chocolate Brownie Skillet Cake is a mash-up between a brownie and a cake. Too fluffy to really be called a brownie but too fudgy to be called a cake. It’s really the best of both worlds and can be whipped up in a flash, in one skillet, with pantry staples. This is what makes it so easy and, ahem, a bit dangerous too. Bake responsibility folks!
the process:
Melt the butter and chocolate (you can do this in the microwave)
Add the eggs, sugar and vanilla (no mixer needed a wire whisk will do!)
Toss in the flour (no sifting needed!)
Pour in an oven-safe skillet (I like cast-iron because it retains the heat of the cake while serving, but any oven safe skillet will do)
Serve with vanilla ice cream (yes, this would be the time to spring for the Haagen Dazs!)
